Taco Salad Nourish Bowl
Ingredients
- 2 tsp 10 mL oil
- 1 lb 454 g ground pork
- 1/4 tsp 1 mL salt
- 2 tsp 10 mL chili powder
- 1 tsp 5 mL cumin
- 1/2 cup 125 mL water
- 1 tsp 5 mL cornstarch
- 6 cups 1.5L chopped romaine lettuce
- 2 cups 500 mL halved grape tomatoes
- Tortilla chips for garnish
Charred Corn
- 1 tsp 5 mL oil
- 1 1/2 cups 375 mL frozen or fresh corn
- 1 jalapeño seeded and diced
Cilantro-Lime Rice
- 1 1/2 cups 375 mL cooked brown rice
- 1 tsp 5 mL lime zest
- 1 tbsp 15 mL lime juice
- 1 tbsp 15 mL finely chopped fresh cilantro
- 1/4 tsp 1 mL salt
Yogurt-Lime Dressing
- 1/2 cup 125 mL plain 2% M.F. Greek yogurt
- 1 tsp 5 mL lime zest
- 1 tbsp 30 mL lime juice
- 1/4 tsp 1 mL salt
Method
- Heat 2 tsp (10 mL) of the oil in a skillet over medium-high heat. Add pork and salt, and cook until browned, with some crispy bits. Add chili powder and cumin, and cook for 30 more seconds.
- Whisk together water and cornstarch, and add to skillet. Reduce heat to medium and cook for about 2 minutes or until liquid has thickened. Transfer to a bowl and set aside.
- Charred Corn: In the same skillet, heat 1 tsp (5 mL) of the oil over medium high heat. Stir in corn and jalapeño; cook undisturbed for 2 to 3 minutes, until corn begins to char. Stir and continue cooking for 1 to 2 minutes, until evenly charred. Remove from heat and set aside.
- Cilantro-Lime Rice: In a bowl combine brown rice, lime zest and juice, cilantro, and salt.
- Yogurt-Lime Dressing: In another bowl, whisk together yogurt, lime zest and juice, and salt. If dressing is too thick, add water, 1 tsp (5 mL) at a time, until the consistency is easy to drizzle.
- Build bowls by adding pork mixture, lettuce, tomato, Charred Corn, and Cilantro-Lime Rice around the bowl’s perimeter. Drizzle with Yogurt-Lime Dressing and serve with tortilla chips, if using.

- These nourish bowls make terrific already-prepped nutritious meals for when you’re on the go. Prepare everything ahead of time, put into individual serving containers, then store in the fridge for up to 3 days. Drizzle with Yogurt-Lime Dressing just before serving.
