Ingredients

  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp cayenne
  • 1lb pork tenderloin
  • 1 tbsp olive oil
  • 2 tbsp butter
  • ¼ cup honey
  • ½ cup vegetable broth

Instructions

  1. Preheat oven to 375 F.
  2. Mix together spices in a small bowl. 
  3. Preheat a cast-iron or ovenproof skillet over medium-high heat. 
  4. While the skillet heats up, pat pork dry with paper towels. Using your hands, rub the spice mixture onto the pork on all sides.
  5. When the skillet is hot, add oil and swirl to coat the bottom. Add pork and sear on all sides until golden brown. Transfer to the oven and cook for 20-30 minutes, or until the internal temperature reaches 155 F. Remove to a cutting board and cover with foil to rest.
  6. Meanwhile, place the skillet over medium-high heat and add honey, butter, and broth. Bring to a simmer, and cook until sauce has thickened slightly, about 2-3 minutes.
  7. Brush the pork with the sauce on all sides. Slice and serve with mashed potatoes and green beans or roasted veggies.
