Air Fryer Sage & Lemon Pork Loin

Centre cut pork loin roasts are a perfectly sized roast for most air fryer baskets. An air fryer’s small cooking space can result in less even cooking; be sure to flip and rotate pork occasionally and test internal temperature frequently near the end of roasting to avoid over-cooking and drying out the meat.

Ingredients

  • 2½ lbs boneless pork loin center roast
  • ½ tsp salt
  • ½ tsp pepper

Lemon-Sage Mayo

  • 1 lemon
  • 1/3 cup mayonnaise
  • 2 Tbsp chopped fresh sage 
  • 3 large cloves garlic, grated

Preparation

Lemon-Sage Mayo

  1. Finely grate lemon zest to measure 1 Tbsp. Juice 1/2 lemon and cut remaining half into wedges for the garnish.
  2. Combine lemon zest and juice with mayonnaise, sage and garlic.

Pork Loin

  1. Preheat air fryer set to 350°F for 5 minutes.
  2. Score fat cap (if there is one) with a sharp knife in a cross hatch pattern. Season pork all over with salt and pepper; coat liberally with one third mayo mixture.
  3. Air fry pork roast, flipping and brushing with additional mayo mixture occasionally, for 45 minutes or until the internal temperature registers 155°F.
  4. Rest pork for at least 5 minutes before slicing.
