Slow Cooker Soy Ginger Pulled Pork

Ingredients

  • 2 lb boneless pork shoulder
  • ½ cup low-sodium soy sauce
  • ¼ cup rice vinegar
  • ¼ cup honey
  • 2 tbsp hoisin sauce
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger minced
  • ½ tbsp sriracha
  • 1 tsp garlic powder
  • 1 tbsp sesame seeds
  • To serve: white rice sliced cucumber, shredded carrot, green onion

Method

  1. Cut pork into 3 large pieces and pat dry with paper towels. Place in a large resealable plastic bag.
  2. Whisk together soy sauce, rice vinegar, honey, hoisin sauce, sesame oil, ginger, sriracha and garlic powder in a mixing bowl. Pour into the bag with the pork and turn to coat. Seal the bag and refrigerate for at least 30 minutes or overnight.
  3. Transfer pork and marinade to a slow cooker and cook on high for 4-6 hours until the meat is tender and shreds easily. Shred the pork with two forks and use tongs to turn the meat in the sauce to coat.
  4. Cook on high, uncovered, for another 10 minutes, until sauce thickens slightly. Add sesame seeds and stir once more to coat. Serve over white rice, with sliced cucumber, shredded carrot, and green onion.
