Ingredients
1pork loin roast
2Tbspolive oil
2TbspDijon mustard
2Tbsphoney
4clovesgarlicminced
1Tbspfresh rosemarychopped or 1 tsp dried
1Tbspfresh thymechopped or 1 tsp dried
1Tbspfresh sagechopped or 1 tsp dried
1tspsalt
1/2tspblack pepper
1/2tspsmoked paprika
1/2cupchicken brothor white wine for extra flavour
1Tbspbutteroptional for basting
Method
Preheat oven to 375°F (190°C).
In a small bowl, mix Dijon mustard, honey, garlic, rosemary, thyme, sage, salt, pepper, and smoked paprika. Pat the pork roast dry with paper towels, rub it with olive oil, then coat it evenly with the glaze mixture.
Place the pork in a roasting pan and pour chicken broth (or wine) into the pan to keep the meat moist. Roast uncovered for about 1.5 to 2 hours, or until the internal temperature reaches 145°F.
Halfway through cooking, baste the pork with its juices. Once cooked, remove from the oven, tent with foil, and let rest for 10-15 minutes before slicing.
