1tbspsesame oildivided
1lbground pork
½cupsliced green onion
2clovesof garlicminced
3tbspoyster sauce
2cupscooked long grain white rice
2cupsfrozen mixed veggies
2tbspsoy sauce
3eggsbeaten
Black pepper and crushed red pepperto taste
Method
Preheat a large, deep skillet over medium-high heat. Once the skillet is hot, add half of the oil and swirl to coat the bottom. Add pork and cook, until browned, 2-3 minutes.
Add green onion, garlic, and oyster sauce to the skillet. Stir to combine and continue to cook until fragrant, 1-2 minutes. Add remaining oil and rice to the skillet, then stir to coat.
Add vegetables and soy sauce, and cook, stirring occasionally, until veggies are warmed through, 1-2 minutes.
Make a well in the centre of the pan. Cook undisturbed for 1-2 minutes, until set on the bottom, then stir and break up the egg with a wooden spoon. Stir everything well to combine. Season with salt, pepper and crushed red pepper to taste. If the mixture looks dry, add a bit more soy sauce and stir to combine.
Top with remaining green onion and serve immediately.
