Ingredients

  • 1 tbsp sesame oil divided
  • 1 lb ground pork
  • ½ cup sliced green onion
  • 2 cloves of garlic minced
  • 3 tbsp oyster sauce
  • 2 cups cooked long grain white rice
  • 2 cups frozen mixed veggies
  • 2 tbsp soy sauce
  • 3 eggs beaten
  • Black pepper and crushed red pepper to taste

Method

  1. Preheat a large, deep skillet over medium-high heat. Once the skillet is hot, add half of the oil and swirl to coat the bottom. Add pork and cook, until browned, 2-3 minutes.
  2. Add green onion, garlic, and oyster sauce to the skillet. Stir to combine and continue to cook until fragrant, 1-2 minutes. Add remaining oil and rice to the skillet, then stir to coat.
  3. Add vegetables and soy sauce, and cook, stirring occasionally, until veggies are warmed through, 1-2 minutes.
  4. Make a well in the centre of the pan. Cook undisturbed for 1-2 minutes, until set on the bottom, then stir and break up the egg with a wooden spoon. Stir everything well to combine. Season with salt, pepper and crushed red pepper to taste. If the mixture looks dry, add a bit more soy sauce and stir to combine.
  5. Top with remaining green onion and serve immediately.
