Ingredients
1.5lbsboneless pork chopscut into 1-2” pieces
3tbspdry sherry
1tspsaltdivided
½tspblack pepper
½tspgarlic powder
3tbspcornstarch
Vegetable oilfor frying
Method
Pat pork dry with paper towels and place in a shallow bowl. Add cooking sherry and ½ tsp salt, then stir to combine. Set aside.
Mix together remaining salt, black pepper and garlic powder in a small bowl.
Heat a deep skillet or a pot over medium-high heat.
While the oil heats up, sprinkle marinated pork with cornstarch and turn to coat.
Test the oil by adding a tsp of batter to the pot. If it sizzles, it’s ready! Add pork to the pot, working in batches to not overcrowd. Allow to cook on one side for 3-4 minutes before using tongs to flip to the other side. Cook until golden on both sides and cooked through, then transfer to a paper towel-lined plate. Repeat with remaining pork pieces.
Season pork with spice mixture. Enjoy immediately!
