1large granny smith applegrated
1large shallotpeeled and minced

1lbground pork
1tbspminced sage leaves
1cupshredded cheddar
2sheets frozen puff pastrythawed according to package directions
1eggbeaten
Method
Preheat oven to 375 F. Line a large baking sheet with parchment paper. Preheat a small skillet over medium heat. Add butter, shallot, and garlic. Season with salt and pepper. Cook, stirring occasionally, until shallot has softened, 3-4 minutes. Remove from heat and allow to cool slightly.
Once the mixture has cooled, transfer to a medium bowl, along with the pork, sage, and cheddar. Use your hands to mix until well combined. Lightly flour a clean work surface. Roll out the first sheet of puffed pastry, just slightly, until pliable. Slice in half along the long side so that you have two strips.
Place the pork filling in a tight line along the long side of the pastry, about 1” wide. Roll the pastry tightly over the filling into a long skinny log, and brush the inside of the seam with the egg to seal. Use a sharp knife to slice into 1” pieces and place on the prepared baking sheet. Brush with more of the egg.
Repeat the process with remaining pastry and filling. Place the baking sheet in the oven and bake, until pastry is golden and internal temperature of the rolls is 145 F, about 20 minutes.
Snip off any browned bits along the edges of each roll, if desired. Serve immediately with mustard.
