Magic Smoked Tenderloin

Get ready to cast some serious flavor spells with Magic Pork Tenderloin! This juicy, smoky, sweet-and-savoury masterpiece is pure magic from start to finish.

Ingredients

  • 1 lean pork tenderloin 1-1.5lbs
  • 2 Tbsp Grill Wizard Sweet Magic Dry Rub
  • 2 Tbsp Grill Wizard Black Magic Dry Rub
  • Optional: olive oil to help the rub stick

Method

  1. Remove any excess fat and silver skin from the pork tenderloin to ensure tender, flavourful meat.
  2. Generously coat the pork with Sweet Magic and Black Magic rubs. Massage the spices into the meat. Let it rest for at least 30 minutes, or refrigerate overnight for deeper flavour.
  3. Preheat your smoker to 225°F. Place the tenderloin on the smoker and cook until the internal temperature reaches 130°F.
  4. Remove from the smoker and sear in a pan coated with oil over high heat for 2 minutes per side to develop a caramelized crust.
  5. Wrap the seared tenderloin in foil and let it rest for 15 minutes. This allows the juices to redistribute, keeping the pork moist and tender.
  6. Slice into medallions and serve warm. Enjoy the sweet, smoky, and savoury magic you’ve created!
