Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup diced ham
  • 2 eggs
  • 1 cup whole milk
  • cup canola oil
  • 1 clove garlic minced
  • 2 tsp Dijon mustard
  • ¼ cup chives minced

Method

  1. Preheat oven to 425 F. Line a muffin tin with silicone or paper liners.
  2. Combine flour, baking powder, salt, and pepper in a large bowl. Mix to combine.
  3. Fold the cheddar and ham into the flour mixture.
  4. In a separate mixing bowl, whisk together eggs, milk, oil, garlic, and Dijon. Add the wet ingredients to the bowl with the flour mixture, along with the chives, and gently stir to combine.
  5. Fill lined muffin tins ¾ full with the batter.
  6. Bake for 5 minutes at 425 F, and then lower the heat to 375 F and bake for another 15 minutes, or until muffins spring back when lightly pressed. Allow to cool for 5 minutes before removing from the muffin tin.
