Pork Steak Tacos
Ingredients
- For the spice rub:
- 1 tsp cumin
- 1 tsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chipotle chili powder
- 1 tsp salt
- 1 tsp Tajin optional
For Tacos
- 1 lb boneless pork shoulder blade steak
- 1 tbsp olive oil
- 1 large navel orange
- 1 avocado
- ½ red onion
- 2 tbsp mayonnaise
- Zest and juice of a lime
- Salt and pepper to taste
- 2 cups coleslaw mix
- 12 small corn tortillas
- Chopped fresh cilantro
Method
- Combine spice rub ingredients in a small bowl. Pat steak dry with paper towels and rub with mixture on both sides. Set aside to come to room temperature, about 15 minutes.
- When the pork is ready, preheat a skillet over medium-high heat. Once the skillet is hot, add oil and swirl to coat the bottom. Add pork steak and cook undisturbed for 3-4 minutes, until the bottom side is caramelized. Flip the steak and cook for another 2-3 minutes, before lowering the heat, covering, and continuing to cook for another 8-10 minutes, until internal temperature reaches 145 F. Remove to a cutting board and tent with foil to rest for 10 minutes.
- Meanwhile, peel and dice the orange and avocado. Finely dice red onion. Add all three to a bowl and stir to combine the salsa. Combine mayo, lime zest and juice, salt, and pepper in a medium bowl. Add coleslaw and toss to coat.
- When the pork is done resting, thinly slice against the grain. Warm tortillas in the skillet or the microwave until softened.
- To serve, divide slaw, pork, and salsa between tortillas. Top with fresh cilantro and enjoy!
