Apple & Bacon French Toast

Ingredients
For the French Toast
- 1 loaf of French bread sliced into ½” slices
- 3 eggs
- ⅓ cup milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 Tbsp unsalted butter
For the Topping
- 5 slices bacon
- ¼ cup sugar
- juice of a lemon
- ½ tsp cinnamon
- 3 apples cored and sliced
Preparation
- In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla. Preheat a large skillet over medium heat. Add some of the butter and swirl to coat the bottom of the pan.
- Working in batches, dip the bread slices in the egg mixture on both sides, then add to the pan in a single layer. Cook until golden brown and crispy, about 3-4 minutes per side. Remove from heat to a plate and wipe the skillet clean with paper towel. Repeat with remaining bread slices.
- While the French toast cooks, set another skillet over medium-high heat. When the skillet is hot, add the bacon and cook until it just begins to brown.
- Lower the heat and add sugar, lemon juice, and cinnamon, and cook, stirring occasionally, until sugar is dissolved and the mixture has thickened slightly, 4-5 minutes. Add the apples, and cook until softened, 4-5 minutes more. Remove from heat.
- To serve, top French toast with apple-bacon mixture and whipped cream. Serve immediately!
