1. Purchase Wisely
Always buy pork from reputable sources. Look for a firm texture and a pinkish-red color. Avoid any pork that smells sour or feels sticky.
2. Store Correctly
Store pork in the refrigerator or freezer immediately after purchase. Keep it at a temperature below 4°C (39°F) and use it within 3-5 days. For freezing, wrap it tightly to prevent freezer burn and store for up to six months.
3. Prevent Cross-Contamination
Use separate cutting boards and utensils for pork and other foods. Always wash your hands, cutting boards, countertops, and utensils with hot soapy water after they encounter raw pork.
4. Cook Thoroughly
Lean cuts of pork like tenderloin, centre cut chops, rib chops, and pork loin roasts taste best when they’re cooked to 150–155°F, then allowed to rest for 3–5 minutes. Pork ribs, shoulder and cutlets are best enjoyed at 180°F. Ground pork should always be cooked to 160°F. Use a meat thermometer to check the temperature is just right.
